Grana Padano and Sautéed Spinach Crostini

1 small baguette, cut into about 20 slices

4 tablespoons olive oil, divided

2 cloves garlic, crushed

1 (10-ounce) package baby spinach

1/2 teaspoon salt

1/4 teaspoon crushed red pepper

1/3 cup pine nuts, toasted

5 ounces Cucina Classica Grana Padano cheese, shaved


1Preheat oven to 400°F. Place baguette slices on baking sheet and brush both sides of bread with 2 tablespoons olive oil. Bake 8 minutes, turning once or until golden.

2Meanwhile, heat remaining olive oil over medium heat in large nonstick skillet. Add garlic and cook 1 minute. Add spinach and salt and cook 4 minutes or until spinach is just wilted, stirring occasionally. Stir in crushed red pepper and pine nuts.

3Arrange bread slices on serving platter. Evenly top with spinach mixture and top with Cucina Classica Grana Padano cheese.
